Legumes are flowering plants that are able to take nitrogen from the air into their roots. They have knot-like growths called nodules along their roots. Symbiotic nitrogen-fixing bacteria live in the root nodules. They change the atmospheric nitrogen into nitrates that are essential to the proper growth of plants. This makes legumes valuable as cover crops. They are also important forage and pasture plants. Some legumes bear their seeds in pods and are used as foods. Alfalfa, clovers, vetches, peas, and soybeans are all in the legume category.
